Here's the recipe for those interested:
1 pkg. (10 oz.) Couscous (calls for Near East brand, but could use any brand)
1/4 tsp Black Pepper
2 Tbsp. Lemon Juice
3 Tbsp. Olive Oil (or in the words of Rachael Ray-EVOO)
2 Large Tomatoes, chopped
1 Med. Zucchini, halved and thinly sliced
1/2 cup Fresh Basil, chopped (I'm too cheap to buy fresh basil out of season, so I just used a large pinch of dried)
1/3 cup Green Onions...half red onion works well too!
3/4 cup Feta Cheese, crumbled
(I also added about 1/2 cup chopped Snow Peas!)
1. Prepare couscous according to package, omitting butter or oil, AND add black pepper to water.
2. In large bowl, combine couscous (prepared), lemon juice, and olive oil. Add tomatoes, zucchini, basil, and green onions.
Chill 4 hours (I didn't do this...and it was still great!)
3. Stir in Feta Cheese just before serving.
Yield: 7 servings, 1.5 cups each

I think someone brought this salad to a pot luck function at church right before we left. Even though I stalked the bowl I couldn't figure out who brought it! I can't wait to try this, I have been dreaming about that salad!!!
